When most people think of outdoor cooking, they picture a smoker full of brisket or a grill loaded with steaks.

But some of the best meals of summer never touch the grill at all.

For the first installment of my Garden to Plate series, I harvested fresh basil from our garden and turned it into a simple Caprese salad featuring tomatoes, fresh mozzarella, olive oil, and balsamic glaze. I paired it with a chilled dry rosé and enjoyed it on the deck on a warm summer evening.

The Garden’s Role in Outdoor Dining

One of the things I enjoy most about summer is how closely the garden and outdoor cooking become connected.

Even when the main course is coming off the smoker or grill, fresh herbs and vegetables often make their way onto the table.

Basil is one of those ingredients that seems to find its way into everything. It’s easy to grow, highly productive, and delivers tremendous flavor.

For this meal, the basil became the star of the show.

Why Caprese Salad Works So Well in Summer

Caprese salad succeeds because it focuses on freshness.

The ingredients are simple:

  • Tomatoes
  • Fresh mozzarella

  • Balsamic glaze

Rosé is one of my favorite summer wines because of its versatility.

A dry rosé brings bright acidity and refreshing fruit flavors without overwhelming lighter dishes.

With Caprese salad, the pairing works particularly well because:
